Hello all,
as you can read: This forum cathegory is free to post any kind of topics.
For those "gourmets" amongst you, I have a special:
The following cooking recipe was developed over 15 years -
An own creation of an asian-italian cooking recipe!
Time for cooking (if all ingredients are present):
30 minutes for preparation/cooking
+30 minutes for backing
Needed cooking items in your kitchen:
- 1-2 plates for cooking up to 180°C or higher
- 1 oven for baking up to 150°C or higher
- 1 saucepan 3-5 liters
- 1 saucepan 1.5 liters
- 1 semi-flat oven dish for 2-3 liters
Ingredients for 2 persons:
(Notes: the more fresh the better!)
- 300-400gr King Prawns (frozen is also ok)
- 250gr pasta, Tortellini (filled with meat or vegetable)
- 125gr pasta, spiral-noodles (or similar)
- 125gr pasta, tiny cannelonies (Mezzane Rigate)
- 1 fresh big clove of garlic
- 1 fresh and big vegetable-onion
- 2 fresh medium-size carrots
- 200-400gr young peas (fresh or from a can)
- 200ml cream
- 500ml milk
- 200ml of white wine
- 4 soup sp.oons of olive oil
- 80-100gr of grated parmesan or pizza cheese (for backing)
- Spices:
- 1 fresh hot chili, or 4 small hot pepperonies (from a can/glass)
- 1 soup sp.oon of instant vegetable soup
- 2 soup sp.oons of sugar
- 1 tea sp.oon of hot mustard
- 1 tea sp.oon of soya sauce (Kikkoman or others)
- 5 pinches of asia spice mix (including curry, curcuma, ginger, etc.)
- 4 pinches of salt + 1 soup sp.oon of salt for noodle water
- 4 pinches of fresh milled pepper
- 3 pinches of milled nutmeg
- 2 pinches of hacked oregano, or 4 fresh hacked leaves
- 2 pinches of hacked thyme, or 1 fresh branch
- 1 pinch of hacked basilica, or 4 fresh hacked leaves
You have all items, so let us start:
Let us heat the kitchen:
- start your 2 cooking plates to 2/3 heat - or ca. 180°C.
- start your oven for medium temp. ca 150°C
- fill saucepan (3-5 liters) with 2.5 liters of water on plate 1 and add a soup sp.oon of salt and olive oil each
- fill saucepan (1.5 liters) with 4 sp.oons of olive oil on plate 2
- Now, you have a bit of time:
- cut the onion into small cubes
- cut the garlic into small slices
- put now the garlic and onion into the saucepan with olive oil
- now there is a bit of time til the onions get slightly brown on plate 2, and the water will boil on plate 1.
- In the meantime, we peel the carrots and cut them into medium-thin slices.
- We also cut the chili or pepperonies into thin slices.
- when the onions/garlic a slightly brown, we add the carrots and king prawns to it - frozen or fresh.
- when the water is boiling in the 3-5l saucepan, put all your pasta in it (Tortellini, spiral-noodles and mini cannelonies). Now, check the time: the pasta should be cooked only between 12-14 minutes!
- If the pasta is ready, remove it from the plate and pour out the residual water into a basin with slightly tiled top. Then give some butter and a touch of nudmeg to the noodle soucepan and cover it with the top and stand it on a wooden plate or similar ...
- Now forget the noodles for a while, it is time for the sauce ...
- Once the king prawns look red and a bit solid, add the white wine to it and wait additional 3-4 minutes - the alcohol will fly away in that time and just leaves a nice fruity flavor
- then add the peas and sugar to it and mix all, wait 3 more minutes
- now reduce the flame of this plate to 1/3 heat and add cream, milk and all other spices and all residual ingredients (except cheese) to it.
- wait till the sauce with the prawns, carrots, peas, etc. is hot enough - but it should not boil!
Now everything is ready for the oven:
- put all noodles into the semi-flat oven dish
- give the full saucepan with the sauce and prawns, etc. over it
- mix it a bit with a sp.oon
- give the cheese over it, maybe also a bit of oregano, and ...
- put the oven dish into the oven for 30 minutes
READY!
Now, enjoy your meal
In case you have not all ingredients, just use similar ones or just leave them, it will also taste nice. Most important is the amount of salt, sugar, pepper, nutmeg, cream, milk ...
